I know we don’t want to talk about it, but finals week is right around the corner. While it’s easier to pretend that this semester hasn’t been flying by, now is the perfect time to be finding ways to create energy-packed meals. When we’re busy, creating healthy meals is often the last thing on our to-do list, so planning ahead now is a great way to get your game plan.
One of the easiest ways to have healthy meals during your stressful, busy weeks is to meal prep! For me, it is easiest to use my Sunday afternoons to go grocery shopping and meal prep, or else it’ll honestly just never happen. Something I’ve learned is that it’s super important to have a variety of recipes using similar ingredients. You don’t get stuck eating the same dish every day because that’s boring and if you don’t have meals you’re excited about you might not even eat them! Another benefit to using ingredients that are versatile, is that you get the biggest bang for your buck.
This is where the November superfood comes into play. Mushrooms can be one of the most versatile and flavorful components of a meal, while they are also nutrient-rich and packed with vitamins and minerals! While mushrooms are often called the fun fungi, they have incredible health benefits and can really change a meal.
While there are over 2,000 varieties of edible mushrooms, across the board they are low in calories, fat, cholesterol and sodium. Mushrooms are also very rich in riboflavin, niacin and pantothenic acid, which are B-complex vitamins that release energy from the fats, proteins, and carbohydrates in your diet! So basically, the vitamins that mushrooms contain help your body get the most energy out of the food you consume. Surprisingly, mushrooms are also rich in protein and potassium! In just one- three ounce serving, mushrooms have approximately 3 grams of protein and 300mg of potassium (6% of your daily value). Mushrooms also contain chitin, which is a dietary fiber known to “bulk” our diet by increasing satiety to keep you fuller for longer.
Mushrooms are like the black leggings of cooking, you can do anything with them because they are so versatile! You can sauté, grill and stuff these nutrient-packed delights any way you want to add a flare to your meals. My favorite way? Oh, that’s easy! I love sauteing mushrooms, marinating them and then placing them on top of my favorite chicken and veggie dish.
