October Superfood: Pumpkin

Hey everyone! My name is Natalie and I’m one of the wellness interns here at Chartwells this fall. That’s right, it’s officially fall y’all! You know what that means? Pumpkin everything! So, it’s no surprise that Pumpkin just happens to be this month’s superfood.


And let me tell you, I am veryyy into all things fall: comfy sweaters, spiced lattes, and especially all things pumpkin. Go ahead, try and name a more nostalgic gourd, I’ll wait… Yep, it’s impossible!

Whether it’s the smell of pumpkin spice lattes in your local coffee shop or the oh so familiar taste of homemade pumpkin pie, pumpkins have us all feeling some kind of way. And lucky for us, we can feel a little bit healthier knowing that Pumpkin might not be so bad for us after all.

Pumpkins have actually made quite a name for themselves in the nutrition world! Turns out, both pumpkins and their seeds are rich in beta carotene and other antioxidants, which we could all use a little more of.

Pumpkins also contain high amounts of fiber which can strengthen your heart, help you maintain a healthy weight and fiber can also help control your blood sugar levels.

Their seeds alone appear to give us a little boost with the high levels of phytoestrogens found in their oil. And get this: much like one of our other fall faves, Squash, pumpkins have zero grams of fat per serving and they are packed with Vitamin A!

In case the idea of cooking with pumpkin seems a little too complicated, I’ve found a few simple recipes to break down just how easy it can be! First, is a quick and sweet pumpkin muffin recipe that actually uses coconut flour as a rockin’ substitute. If you’re not into sweets, here’s a spunky curry pumpkin soup recipe that I hope y’all can use to spice up your fall! And to top it all off, both of these recipes are paleo and gluten-free, because everyone should get to enjoy a little pumpkin this fall!
